PEANUT BUTTER SOFT FUDGY COOKIES

Makes 12 cookies l Serves 6 l Time: 20mins

Ingredients:

1 cup natural/organic peanut butter (no added sugar)

½ cup Vanilla Keto Shake

½ cup Sweet Like Sugar or Swerve

1 egg

Instructions:

Preheat oven to 350F.

Combine all ingredients in a large mixing bowl and mix well. Roll into balls and place onto a silicone baking mat or any baking tray. Press down on each ball twice with a fork.

Bake for 10 minutes and then remove from oven to cool. Don’t try to move them at this stage as they will still be very soft. Just leave them as they are and wait…they will firm up and be nice and fudgy once they’ve fully cooled. Yum!

*If you have a spice grinder or great blender like a Vitamix, you may like to powder the sweetener before you begin to make the cookies extra smooth; but the recipe works great anyway if you don’t.

Special note: if you run out of Vanilla Keto Shake, you can substitute by using twice the amount of sweetener and adding 1 tsp of vanilla bean paste.
